Las Vegas Casino to Open Food Hall on Former Buffet Site
On January 19, the Rio All-Suite Hotel & Casino in Las Vegas is set to open a food hall, replacing the former Carnival World Buffet, as part of a $350 million investment. This move aligns with the trend in Las Vegas of repurposing dining spaces into new and diverse culinary offerings.
Casino operators in the city have increasingly developed standalone food halls or eateries, distinct from gambling areas in adjacent buildings. Examples include the Promenade restaurant at the recently opened Fontainebleau establishment, Eat Your Heart Out at Durango casino in southwest Las Vegas, and the Fremont Food Hall on Fremont Street, constructed on the site of a former parking lot.
